材料：猪五花肉500克，宜宾芽菜230克。
调料：老抽10克，花椒粒5克，姜丝10克，八角5克，白糖适量，酱油适量，盐少许，鸡精少许。
私房菜之烧白的做法
1、五花肉洗净用清水煮至刚过心捞起，用少许糖和老抽混合后抹在肉皮上，待表面稍干再抹一次晾一会备用。
2、炒锅放少许油烧热后，把抹好汁的肉皮朝下入锅内炸至表皮微酥捞起。
3、用一小碗倒入酱油，少许白糖，盐，鸡精，再加入少许清水拌匀成料汁；把肉切稍厚点的片在碗底摆好，在肉片上放一部分姜丝，八角粒，花椒粒，再洒上一半料汁。
4、然后再上面铺上宜宾芽菜末，再把剩下的姜丝，八角粒，花椒粒摆在芽菜表面，洒上剩下的料汁，上锅蒸2小时左右（高压锅40分钟）至肉软烂。
