波士顿龙虾

产地：在北美洲至加拿大东沿岸都有出产

特点：最易认，因有一对超巨型的虾箝，其中一只较大。多褐绿或褐橙色，身长可达60厘米，体重达4公斤，表面很光滑。相比之下虾身没有膏，但肉较嫩滑细致，虾味较清淡。

英国花龙虾

产地：英国

特点：高档龙虾的一种，外形呈蓝色，以味鲜而闻名，产量少。其比本地龙虾嫩滑，但龙虾味较清淡，肉质颇爽口弹牙。

小青龙

产地：南中国海、广东、广西等地

特点：原产地南非，因其体格较小，所以口感紧实。虾身带橄榄绿色，重量由250克至1斤不等，大小适中，因经常被过分捕捉，产量极少，真可遇不可求，肉质纤维幼细，味道很鲜甜。

澳大利亚龙虾

产地：澳大利亚南部或西部

特点：别以为龙虾熟才红色，西澳大利亚的无论外壳及虾肉都带粉红色，头部比起南澳的较大，壳较薄，肉的纤维较粗。而南澳的呈朱砂红，肉质最弹牙兼结实，比西澳的甜美。澳大利亚龙虾头多膏，所以做酱汁最佳。

大嚼龙虾无疑是一种享受，如何烹制龙虾却是对厨艺不小的考验：生食，清蒸，堂灼，爆炒……哪种做法才能充分发掘龙虾非同一般的潜质，不怕被人奚落是暴殄天物?以下推荐可说是经过了中西厨艺界数百年的锤炼，是留存美味的稳妥选择。

刺身

每一口龙虾肉在舌间清新地舒展，略有弹牙，质感分明。酱油与芥末是理想的佐味料，但切记要控制好酱油的厚和咸，不可盖过龙虾的清爽滋味。配酒则首选日本清酒。

清蒸

中西厨艺界皆有“清蒸龙虾”这道菜，只不过，中餐只会用到清淡调味料，强调龙虾清鲜质韧的自然风味，而西餐的做法就相对复杂许多，要先将龙虾钳拔断，再以海鲜夹将虾身硬壳压碎，挖出虾壳内大块大块的龙虾肉，淋上柠檬汁、再蘸满融化后的金黄色奶油后方可大快朵颐。

白灼

将龙虾肉放入上汤里滚一下，待肉质不生不老时捞出，即可。喜爱清淡口味的人，白灼时选用清水即可;重口味者，则可选用老火靓汤。至于配酒，产自勃艮第寒凉产区Chablis的Chardonnay是最保守的选择。

爆炒
